Allsports:Power Pre-Contest Vegetable Tortilla

 

Ingredients:

8 egg whites

1 small onion, finely chopped

1/2tsp garlic powder

3tbsp water

150g tomatoes, chopped

150g potatoes, finely diced

150g courgette, diced

1tbsp vegetable oil

Beat the egg whites, onion, garlic powder and water until slightly frothy. Lightly coat the bottom of a non-stick frying pan wit the oil and cook the tomatoes, potatoes and courgettes for 2-3 minutes. Pour the egg mixture over the vegetables. Once the mix is cooked underneath put under a medium grill to ensure the eggs and potatoes are cooked through.

The whole tortilla contains 169 calories, 16g protein and 23g carbs and is sufficient for 2 servings.

You can use other vegetables if you prefer - such as swapping the courgette for broccoli or tomatoes for peppers Just ensure you keep the number of eggs and potatoes as the recipe to get the amount of protein and carbs declared.
